Preparation time: 15 minutes Cooking time: 15 minutes 2 boneless, skinless chicken b.r.e.a.s.t.s (10 ounces total), split and pounded to -inch thickness 1 tablespoon low sodium soy sauce 1 tablespoon cornstarch SEASONING SAUCE.

2 tablespoons low sodium soy sauce 1 tablespoon dry sherry 1 tablespoon rice wine vinegar 1 teaspoon sugar 1 teaspoon sesame oil 1 tablespoon peanut oil 4 medium dried red cayenne peppers green bell pepper, julienned 1 stalk celery, thinly sliced on the diagonal cup roasted peanuts 1 scallion, green and white parts, chopped Cut the chicken into bite-size pieces and place in a gla.s.s bowl. In a small bowl, mix the soy sauce and cornstarch into a smooth paste and combine with the chicken. Stir to coat all the pieces, then cover and set aside for 10 minutes.

Whisk all the ingredients for the seasoning sauce in a small bowl and set aside.

Preheat a wok or large skillet, then add the oil. Stir-fry the dried red peppers until blackened, about 1 minute. Add the chicken pieces and stir-fry until the chicken begins to brown, about 2 minutes. Add the green pepper and celery and stir-fry until crunchy, no more than 2 minutes.

Add the seasoning sauce and stir until thickened and hot-just 1 minute or so. Remove from the heat and stir in the peanuts and scallions. Mix together then divide between two rimmed soup bowls.

Marinating time: 10 minutes Cooking time: 15 to 20 minutes 2 teaspoons fresh or frozen orange juice 2 tablespoons gin teaspoon dried oregano teaspoon hot red pepper flakes teaspoon kosher salt 2 tablespoons peanut oil 2 boneless, skinless chicken b.r.e.a.s.t.s (10 ounces total), split and pounded to -inch thickness 1 medium onion, thinly sliced In a bowl or resealable plastic bag, combine the orange juice, gin, oregano, red pepper, salt, and 1 tablespoon oil. Add the chicken b.r.e.a.s.t.s and onions and set the mixture aside to marinate, covered or sealed, about 10 minutes.

Heat a large skillet over medium-high heat for 1 minute. Add the remaining tablespoon of peanut oil. Lift the chicken from the marinade and pat dry, reserving the marinade and onions. Place the b.r.e.a.s.t.s in the hot skillet, smooth side down. Cook about 7 minutes, then turn and cook for 3 more minutes on the second side. Add the reserved marinade and onions to the pan. The gin and orange juice mixture will steam through the seared meat. Cook, turning the chicken once or twice more, until the onions are brown, heaping them atop the chicken as they begin to color. By this point the chicken will be cooked through and the sauce nearly evaporated. (Cut into the thickest part of the chicken to check: it should be opaque white.) Divide between two dinner plates and serve.

Preparation time: 15 minutes Cooking time: 15 minutes 2 boneless, skinless chicken b.r.e.a.s.t.s (10 ounces total), split and pounded to -inch thickness teaspoon kosher salt teaspoon freshly milled black pepper 1 teaspoon olive oil 1 teaspoon unsalted b.u.t.ter cup finely chopped onion 2 garlic cloves, chopped 1 teaspoon Dijon mustard 2 teaspoons sherry vinegar 1 tablespoon extra-virgin olive oil 4 cups mesclun or mixed baby lettuces 1 teaspoon dried cranberries Season the chicken with salt and pepper. Heat a skillet over medium-high heat, then add the olive oil and b.u.t.ter. Cook the chopped onion and garlic until transluscent, about 4 minutes. Move the vegetables to the sides of the pan to make room for the chicken. Place the b.r.e.a.s.t.s in the pan and let them cook undisturbed until they begin to brown on the edges, about 2 minutes. Stir together the mustard and vinegar in a small bowl. Spoon teaspoon of the mixture into a mixing bowl and set aside. Pour the rest over the chicken and onion mixture in the pan. Cook and stir 1 more minute.

While the chicken is cooking, whisk the extra-virgin olive oil into the mustard mixture in the mixing bowl. Toss the salad greens in this vinaigrette, then divide between two plates. Top with cooked chicken and finish with dried cranberries. Serve at once.

Cut the chicken thighs into 1-inch-wide strips. Coat them with the dry rub, reserving any remaining mixture.

Heat a large skillet over very high heat. Add the oil and preheat. Cook the chicken strips, turning them with tongs, until cooked through and golden on the outside, about 5 minutes. Transfer to a warm plate.

Add the onion slices to the hot pan and cook until they begin to brown, about 6 minutes. Add the garlic and cook a few minutes more. Add the tomato and cook, stirring a moment longer. Add the spinach in handfuls, stirring until it begins to wilt before adding another batch. Once all the spinach is in the skillet, sprinkle it with the reserved dry rub, stir, then cover and cook 2 to 3 minutes longer.

Stir in the grated ginger and half of the coconut milk. Taste and adjust the seasonings with salt and pepper. Transfer to a food processor or blender and puree until smooth. Remove the blade and stir in the cheese squares, cover, and set the mixture aside.

Meanwhile, add the remaining coconut milk to the hot pan and boil over medium-high heat until reduced by one-third, about 5 minutes. Return the chicken pieces to the pan. Taste and adjust seasonings with salt and pepper.

To serve, divide the spinach mixture between two warmed dinner plates. Place chicken and gravy alongside. Sprinkle the plate with black sesame seeds.

That's a good idea, because the salad makes enough to feed four-it keeps well in the refrigerator and makes a great "free lunch" the next day. You can double the spice blend and cook four pieces of meat at one time, saving two for lunch. Shred all the salad ingredients in the food processor using the slicing blade, and you'll have the work done in no time.

MAKES 2 SERVINGS.

Preparation time: 20 minutes Chilling time: 30 minutes (concurrent) Cooking time: 10 minutes 4 cups finely shredded green cabbage 3 tablespoons red wine vinegar cup thinly sliced red bell pepper DRESSING.

One 1.7-ounce can flat anchovy fillets, drained 6 garlic cloves, minced 3 tablespoons minced fresh flat-leaf parsley 2 tablespoons extra-virgin olive oil 2 boneless, skinless chicken b.r.e.a.s.t.s (10 ounces total), split and pounded to -inch thickness 1 teaspoon extra-virgin olive oil 1 tablespoon quatres epices quatres epices seasoning (see note) seasoning (see note) Freshly milled black pepper Kosher salt to taste Sprinkle the cabbage with vinegar, then toss in a large bowl. Arrange the pepper on top of the cabbage, cover, and refrigerate until serving time. Should you have some chicken left over, make an impromptu nicoise-style salad the next day, tossing cooked chicken with nicoise olives, hard-cooked eggs, lettuce, and wedges of terrific tomatoes. Finish with drops of extra-virgin olive oil and lemon juice.

Preheat the oven to 450F. Place the chicken in a gla.s.s baking dish. Brush both sides with half of the olive oil. In a small bowl, stir together the cheese, oregano, salt, and pepper. Sprinkle over the chicken. Add half the chicken broth, then place in the oven and roast until the chicken is cooked through, about 25 minutes.

When the water comes to a boil, blanch the broccoli rabe pieces for 2 to 3 minutes. This reduces the bitterness. Drain well. Meanwhile, preheat a large skillet over medium-high heat, then film the bottom with the remaining oil. Add the garlic, the blanched broccoli rabe, and the remaining broth, cover, and steam until tender, 5 to 8 minutes.
