Chicken Piccatta al la Donny 2 boneless, skinless chicken b.r.e.a.s.t.s, b.u.t.terflied.
approx 1 1/2 cups of regular flour divided in half salt (kosher or sea salt) pepper (fresh ground white if you have it) pinch of cayenne pepper Garlic powder Egg wash (1 egg beaten, with 1 TB water) 2 TB b.u.t.ter 1/3 cup lemon juice (fresh squeezed) Olive oil Pinch of sugar 1 cup White wine-something you would drink but not expensive cup Brined Capers (drained) Cornstarch Serve with pasta of choice but Donny loves to use angel hair for both presentation and quickness of cooking time.
Pound out the chicken b.r.e.a.s.t.s before dredging them in flour (just salt and pepper in flour), then egg wash, and then seasoned flour (second flour should use salt and pepper to taste, cayenne, and garlic powder to taste-be gentle so as not to overwhelm the sauce) before putting them in a heated skillet coated in olive oil, to brown on each side. Remove from pan and set aside on paper towel while making the sauce.
Sauce: Add b.u.t.ter, lemon juice (fresh squeezed of course), a pinch of sugar to tame the acidity, and 1 cup of white wine to the pan. Once that is combined, add capers. Whisk in a tsp of corn starch until the sauce starts to thicken. Return chicken to the simmer for 5 minutes. Serve garnished with parsley over a bed of angel hair pasta. Donny usually serves this with good Italian bread and a green salad.
Donny's homemade cure-all chicken soup Stock: 4 pounds chicken carca.s.ses, including necks and backs or one full chicken 1 large onion, quartered 4 carrots, peeled and cut in 1/2 4 ribs celery, cut in 1/2 1 leek, white part only, cut in 1/2 lengthwise 4 parsnips peeled and cut in 1/2 5 sprigs fresh thyme 10 sprigs fresh parsley with stems 2-3 bay leaves 8 to 10 peppercorns 2 whole cloves garlic, peeled 10 sprigs of fresh dill small piece of (1lb.) kosher flanken or brisket.
2 gallons cold water Combine all herbs and spices into a cheese cloth bag and secure with food safe string or twine. Add chicken and bag to a large stock pot then cover with 2 gallons of cold water. Cover with flanken or brisket then cover and bring to a simmer. Keep covered but let steam escape. Skim every 20-30 minutes and add water as needed to keep everything covered. Simmer for between 4-6 hours. (longer is better as it builds flavor).
Allow pot to cool and remove meat, chicken and cheese cloth bag. Strain to remove veggies and any debris and cool overnight in fridge. Remove as much fat as you wish (but leave it little for flavor and richness.) Remove meat from chicken, chop and use in the soup or for chicken salad/sandwiches. Flanken or brisket can also be used for sandwiches.
To serve: Reheat soup and add fresh veggies of choice or leave as broth. Can be served with egg noodles cooked in broth, matzo b.a.l.l.s, or simply used as a basic stock for cooking. Can be frozen for up to 6 months.
Donny served it with a few chopped up fresh sprigs of dill and parsley, chopped carrots and celery, shredded chicken, and egg noodles.
Caity's Apple Slaw 1/4 cup olive or vegetable oil, plus a drizzle 1 cup cider vinegar 2 TB stone ground mustard 1/4 to 1/3 cup sugar 6 peppercorns 2 fresh bay leaves 1 teaspoon kosher salt 1 small head red or green cabbage, cored and thinly shredded 1 medium Vidalia onion, halved and thinly sliced 1 large or 2 med granny smith apples, peeled, cored, quartered and sliced thinly (keep soaking in cold water to keep color until needed) Salt and freshly ground white pepper, to taste Stir the vinegar, sugar, peppercorns, bay leaves, and kosher salt together in a pot over med to high heat. Bring to a boil then lower the heat and allow to reduce for 5-6 minutes stirring once or twice Mix the cabbage, onion, and apple in a large serving bowl or large closeable plastic (food grade) bag. Sprinkle with celery seeds, if you like the flavor.
Pour the reduced brine over the slaw through a strainer, slowly. After mixing well, add up to a cup of olive or vegetable oil and toss again. Taste, season with salt and pepper as needed. Toss again and taste before serving. Can be served warm or cold.
